Lauren's Happy Mud

Hola from Austin :D

 So today marks an awesome day. I am on my journey of eating better and getting exercise. So I started the day with a red banana (which is like a magic fairy crossed a banana and a strawberry) and a larabar. Then as a snack I had a melody of cherry tomatoes, celery, and orange bell peper. For lunch it was tabouleh made with millet and dinner was kidney beans, pinto beans, black beans, dairy free cheese, and brown rice. Then for the best part of my day I ran the loop from the Mopac bridge to the Pfluger bridge :D :D :D It was awesome. I ran the whole way even up the loopy the loop thing to get onto the Pfluger bridge. Also, why is the trail almost all uphill on the south side of Town Lake when heading west. So not cool but my butt got a workout.

My post run snack is that lovely concoction that you see above. My roommate (Yay Chris) affectionately titled it Lauren's Happy Mud :D After my run all I wanted was coconut, of course but I had this instead and it was magic. I was inspired by blackberry lemonade because I have so many blackberries and lemons right now lol

Lauren's Happy Mud :D

 Ingredients:
1/2 cup of filtered water
2 handfuls of baby spinach or other green
1 small handful of cilantro
1/2 cup of frozen blackberries
1 ripe banana
The juice of one small lemon
Stevia to taste

In a blender combine the water, spinach, and cilantro. Blend until the greens are broken down. Then throw in the blackberries, banana, and the lemon juice. Blend until combined. Then add Stevia to taste.

It will look brown but it will taste like blackberry lemonade in a healthy form :D
